Pan grilled ginger honey pork tenderloin, sauteed spinach, and quinoa with dried apricots and cinnamon. I realized the few reviews this recipe had weren’t all that great after I started cooking. I don’t see why they gave it bad reviews though. It took longer than 15 minutes to cook like the recipe said, but it was tender and the ginger honey glaze was great. I let it marinate for a few hours too and I doubled the sauce. I don’t have a grill pan so I just used a regular pan. This was easy and tasted great. Aya loved it too.

And the apricots and cinnamon in the quinoa totally complimented the honey ginger flavor too! Such a great burst of flavors on one plate. 🙂
