I picked this because it looked nice and simple. It’s nothing super special, but it was a nice filling meat free dish for a weeknight meal. The caramelized onions combined with the tomato sauce had great flavor. Aya really really liked this.

Apparently I like “ethnic flavors”(Indian, Ethiopian, and I guess now Egyptian too) and love the texture of lentils and different grains. This was really simple but so flavorful. I gobbled this up!

Thanks Ayesha! The cooking light site had two recipes with the same name. One was rice and lentils with spicey tomato sauce, and the other was koshari. I’ll try this link you sent me!
