You can find a lot of innovative pasta recipes now using soba noodles, but traditionally, it’s eaten plain with a dipping broth. We had two broths, one being the typical soy sauce based “men-tsuyu”(麺ã¤ã‚†) and the other a walnut and miso based one Aya’s mom bought to try. She topped the noodles with sesame seeds and nori seaweed. This was so simple and delicious.

Soba Noodles
All you do is boil the noodles according the directions on the package, and then dip them in the sauce. (The sauce we had came with the noodles).
That looks delicious, but how do you eat it without making a mess? I have never tried to dip noodles before. Is that a dumb question? I’m asking it anyway. 🙂
Hi Desiree, that’s not a dumb question at all! I have and still do make a bit of a mess. 🙂 If you are proficient with chop sticks, you just grab some noodles with your chopsticks, dip them in the broth bowl and then slurp them up. I suppose you can dump the broth on the noodles, but I was told that the dipping method prevents the noodles from getting soggy.
Thanks! I am going to try it! At least in my own home I can say I am proficient *enough* with chopsticks. My husband won’t tell on me and my three year old will believe what I tell him :p
