Good Eats Meatloaf

Meatloaf, mashed potatoes, and roasted broccoli. I’ve tried many meatloaf recipes over the past year or so, and this was a winner. Chili powder, thyme, and cumin in the meatloaf made for great flavor. I didn’t use the crumbled croutons, just Japanese bread crumbs instead. I also only used regular ground beef instead of all the different types her included in the recipe.

V-Day Burgers and Potato Wedges

Usually I cook something a little more fancy for Valentine’s Day. Maybe fish, or a steak type thing like last year. But this year, Aya requested burgers. Huh? I thought she meant one of my fancy burgers I’ve made before. Like the turkey burger with cantaloupe, or the bourbon burger with caramelized onions and Gruyere cheese. But no. She just wanted a regular plain burger with potato wedges. I didn’t really care because I was more concerned about dessert.

Sometimes Betty Crocker knows best. It’d be hard to mess this up. I doubled the amount of basil and oregano. Simple, meaty, saucy, GOOD.

Provencal Beef Daube

If I come across a recipe that calls for dried porcini mushrooms, I usually skip it, or just use regular mushrooms. I’m too cheap to pay those big prices for those fancy mushrooms. But I decided to splurge today and paid 6 bucks for 1 ounce of dried porcini mushrooms. I think it was worth it! Those mixed with the green olives and all the other spices made a really rich unique flavored beef stew. The prep was more than I was expected for a slow cooker recipe, but it was worth the effort.

Meatloaf and Quinoa Stuffed Squash

Meatloaf, quinoa stuffed squash, and green beans. The stuffed squash is a recipe, but I threw the meatloaf together to use up some ingredients. And for throwing it together, it turned out really moist and flavorful. I threw in a cube of pureed spinach and a 1/2 cup of very finely chopped carrots. I think that did it. The stuffed squashed was great

RECIPES:

Quinoa Stuffed Squash

Meatloaf

1.25 lbs ground beef
1 small onion chopped
1 egg
1/3 cup bread crumbs
1/2 cup finely chopped carrots
1 oz pureed spinach
salt and pepper
2 squirts ketch-up

Sauce: ketch-up and Worcester sauce

Mix all together, put in loaf pan, put sauce on top, and bake at 375 degrees for 30 to 45 minutes.
