Goulash

Goulash and a garden salad.  I know there are a bunch of different variations of this recipe, but I did the one my mom made all the time.  I had some ground beef in the freezer I wanted to use up so the timing was good.  Ellie liked it too, so that was a bonus.

RECIPES:

Goulash

1lb ground beef
1/2 cup chopped onions
1 chopped green pepper
1 6oz can of tomato paste
1 can of diced stewed tomatoes
2 cups cooked elbow macaroni
salt and pepper to taste

Brown the meat, drain the grease. Cook the onions and green peppers. Add the meat, tomatoes, tomato paste, salt and pepper, and noodles. Let simmer for a half hour or so. That’s it.

Burgers w/ Blue Cheese Mayo and Sherry Vidalia Onions

Burgers with blue cheese mayo and sherry vidalia onions, and pasta salad.  I love a good burger and this was pretty tasty!  But considering they say the world is going to end tomorrow, I kind of wish we went out for dinner instead.  Someplace nice, too.  At least we went out for ice cream though.

Italian Meatball Burgers

Italian meatball burgers, pasta salad, and steamed asparagus.  These burgers were awesome!  I wish I had leftovers.  When I look at this picture, it makes me want to eat it again.

Spicy Orange Beef

Spicy orange beef, rice, and a garden salad. The was super super easy. I felt like I was missing something. So easy, but soo good. You could easily add vegetables to this which I would do next time.

Stir-Fry Rice Noodles w/ Beef & Spinach

Stir-fried rice noodles with beef and spinach, miso soup, and a garden salad.  This was really good.  I only used half of the sriracha paste it called for and I found that to be plenty of heat for me. I give this one high marks.
