Mexican Chocolate Breakfast Shake

2013_02_25aA friend posted this recipe on Facebook and it looked so good. Aya eats oatmeal everyday for breakfast and this has pretty much everything she already adds to it anyways. It’s just blended and cold. So we had to try it.

This is an awesome alternative to her regular bowl of oatmeal. And since she’s tried it, she’s been drinking it everyday for breakfast. It’s super tasty and very filling. I’m not going to lie and say it tastes just like a chocolate milkshake, but as far as breakfast shakes go, it has a great texture and is very tasty.

We used almond milk to soak the oats and used agave nectar as the sweetener. Using a frozen banana as it calls is essential for the frosty milkshake texture. I did it once without a frozen one and it just wasn’t the same.

With Aya’s maternity leave over, she’s back at work and wanting to do everything possible to keep her milk supply up. Which includes eating tons and tons of oatmeal. She’s never been a huge fan of oatmeal, so she researched a lot of different recipes to keep it interesting. Apple cinnamon, peanut butter and jelly, and this one; pumpkin pie! We’ve all been enjoying this one.

Puffed Oven Pancake

You can barely see the pancake part because I piled sauteed apples on it pretty high. And fruit is healthy and good for breakfast regardless of how much butter you use, right?

My friend had suggested this to me and not wanting to go through the hassle of making regular pancakes, I thought Id give it a go. The ingredients were few and the process was very simple. The end result had the taste and texture of a thick crepe. These were really good, but I was left still hungry. I’d double the recipe next time or plan for some more sides.

Breakfast for dinner!?  You bet.  Nothing like shaking it up with Belgian waffles, breakfast sausage, and a fruit salad for dinner.  These weren’t Waffle House waffles, but I have to say, I liked them… a lot.  They were a nice syrupy sponge with melted butter.  Mmmm… Butter…

Brunch

We had brunch at our friend Amy’s place in downtown Detroit.  We had eggs with baby bella mushrooms, green onions, and spinach, turkey bacon, tamales, fruit salad, and homemade scones with homemade jam.  I made the scones this morning, and Amy did the rest.  The tamales were from Honeybee Market in Detroit.  I love brunch.  Anything can be considered brunch food.  Cold pizza, tamales, jam, whatever.
