We had originally planned on having a get together with our dear friends Mark and Ksenija (who is an extremely talented photographer. You can check out her work here!) around Thanksgiving (hence the name “Friendsgiving”), but our schedules didn’t line up until now. It worked out because it gave me ample time to plan the epic menu. After we enjoyed an incredible vegetarian meal together at a vegetarian restaurant called Inn Season in Royal Oak, I was inspired to do a complete vegetarian spread. Salmon with Lentils
I kind of stumbled upon this recipe. I was looking for a simple salmon recipe that didn’t require a cedar plank, mustard sauce, or soy sauce. This one seemed easy enough and I had all the ingredients. So easy too that I’ve made it three times already! Ellie loves this one, and now Chloe gobbled this one up too! This is definitely in the rotation.

It calls for two cups of leeks, which I never have and always forget to buy. I always leave them out and it tastes great. One of these days I’ll give it a try with them.
Indian Cauliflower Pizza and Lentil Soup
This was really simple to throw together and very tasty. This was a nice take on pizza. You could probably use different vegetables and throw on some chicken if you want.
I used a pre-baked crust and a jar of tikka masala for the sauce. I have enough ingredients to make this again next week, and I’ll do that for sure!
I’m not a huge fan of lentil soup, but after using lentils earlier in the week I figured I could give it a try again. I found this recipe from Alton Brown that seemed easy enough. And to my surprise, I really liked this. It was very filling and had great flavor.
I used vegetable broth and left out the “grains of paradise, ” because I didn’t have any and I’ve never heard of them. This recipe also makes a huge batch, so if you’re not wanting a ton, maybe halve the recipe. I was hoping for leftovers to carry us through the weekend though.
