Pasta Carbonara

This is one of my favorites Aya makes. I have had it in awhile so it was a special treat. I love pasta and pasta carbonara is one of my favs. Aya added mushrooms and spinach to jazz it up a bit.

RECIPES:

Pasta Carbonara

1 tbsp olive oil
3 tbsp butter
3 1/2oz pancetta or bacon, diced
3 eggs beaten
2 tbsp milk
1 tsp thyme
12 oz pasta (she used linguine)
2 oz Parmesan cheese, grated
salt and pepper to taste

Heat the oil and butter in a skillet. Add the pancetta or bacon and cook until browned. Mix together the eggs and milk in a small bowl. Stir in thyme and season to taste with salt and pepper. Cooke the pasta according to the directions and drain thoroughly. Add the cooked drained pasta with the eggs and cook over high heat for about 30 seconds or until eggs just begin to cook and set. Do not overcook the eggs or they will become rubbery. Add half of the grated cheese, stirring to combine. Transfer the pasta to a serving plate, pour the over and toss to mix well. Sprinkle the rest of the grated Parmesan over the top.

Shrimp Florentine Pasta

Garlic, lemon, and butter. It doesn’t get much simpler than that. I eased up on the crushed red pepper for Ellie. I love these simple pasta dishes. Nice and light for summer too.

Bacon and Butternut Squash Pasta

This was awesome! Labor intensive, but well worth it. Plenty for leftovers too. I used turkey bacon, but everything else I followed the recipe as best I could. I even splurged and bought the expensive Gruyère cheese. I was hoping to use ziti noodles, but my grocery store only had mini ziti, so I used penne instead. Oh well. Maybe next time. If you’re not a huge kale fan, I think this would be equally good with spinach.

Penne Pasta with Kale, Bacon, and Sun-Dried Tomatoes

Penna pasta with kale, bacon, and sun-dried tomatoes. I completely forgot to add the cheese at the end! Either way, this was still a decent pasta dish. The funky kale combined with the bacon (I used turkey bacon) and the sun-dried tomato worked really well. My noodles took longer to cook, so I accidentally overcooked the kale. It would have been better if the kale wasn’t as mushy. Super fast and super easy though.

Three Cheese Ravioli

Three cheese ravioli with homemade pesto, and a salad with fresh mozzarella and garden tomatoes.  I went to make this recipe from Cooking Light, but I did something easier.  I had frozen ravioli, and Aya had made a batch of pesto and had a few servings in the freezer. I just boiled the ravioli, defrosted the pesto, mixed, and added some chopped tomatoes.  This was the fastest dinner ever.

This is what I intended to make.  Their version of pesto is much lighter and has less oil than Aya’s.  But hers is so good and was already made.
