Pasta Puttanesca

Pasta puttanesca and a garden salad.  Easy easy easy.  But if you don’t like olives, this isn’t for you.  This was a very strong flavored dish.  The fact it was so quick and so easy gives it extra points.

Stir-Fry Rice Noodles w/ Beef & Spinach

Stir-fried rice noodles with beef and spinach, miso soup, and a garden salad.  This was really good.  I only used half of the sriracha paste it called for and I found that to be plenty of heat for me. I give this one high marks.

Spring Linguine w/ Basil

Spring linguine with basil, and a garden salad with blue cheese, dried cranberries, and walnuts.  I made this last summer with fresh basil from the garden.  It doesn’t call for much, but I definitely missed having it this time around.  Otherwise, this one is quick and easy, and very good.

Mini Farfalle w/ Roasted Peppers, Onions, Feta, & Mint

Mini farfalle with roasted peppers, onions, feta, and mint, and a garden salad.  This dish also has raisins and pine nuts.  You’d think with all that crazy stuff in there it’d be a pretty flavorful dish.  But they all seemed to blend pretty well together because nothing really stuck out too much.  I went with rotini instead of the mini farfalle.  It was from the 20 minute meals section and it actually was really fast.

Mushroom Pasta

To conclude Noodle Week, I went with mushroom and asparagus pasta and a garden salad.  The recipe didn’t call for asparagus, but I added it anyways.  That was good eatin’.
