Spaghetti bolognese and a garden salad. As I was making this I kept thinking that it’d be a lot easier and quicker to just add some meat to a ready made spaghetti sauce. But then I ate it and dang, this was totally worth the extra effort. There’s nothing extra special about this, but I can’t put my fork down.
Pan fried chicken, smoked gouda mac and cheese, broccoli with red pepper flakes, and a garden salad. The chicken didn’t look like that photo from the recipe, but it had great flavor. The mac and cheese was awesome. It says put it in the oven for 15 min, but I would do it for 10 instead. I like broccoli as a side, but I never know what to do with it besides to steam it with a little butter and salt. This was a good alternative to the standard.

Spaghetti and meatballs with a garden salad. I needed to use up some ground beef and some jar pasta sauce. And I wanted to do something simple and easy. I got the meatball recipe from my friend Haniyyah which you could hardly call a recipe. The instructions were basically, “a little bit of this, and little bit of that, teaspoon, tablespoon, it doesn’t matter.”

Meatballs (my interpretation)
Ingredients
1lb beef
1/2 tsp salt
1/2 tsp black pepper
2 tsp italian seasoning
4 Tbp bread crumbs
4 Tbp shredded parmesean cheese
2 tsp crushed red pepper (I only did 1/2 and that was plenty hot for me)
2 tsp minced garlic
Mix meat, roll into meatballs, add a little water in the bottom of the dish, cover and bake at 350 degrees for 45 minutes.
Cavatappi with proscuitto and parmesan with a garden salad. This was a quick easy recipe, but it was just “nice.” You know when you meet someone and all you can say is, “they were nice.” That’s how this was. It’d be a lot better if you added some vegetables like asparagus, or broccoli, or mushrooms. But I was lazy and didn’t feel like cooking at all today and this took 15 minutes. So this “nice” dish just fit the bill. I obviously didn’t use cavatappi and went with penne instead.
Shrimp arrabbiata and a garden salad. This recipe said it was super fast pasta. It was exactly that. I used cooked frozen shrimp instead of fresh. The longest part was pulling the tails off. And instead of linguine, I used whole wheat spaghetti noodles. This was a nice quick dish with the red pepper adding a small kick.
