Pork Tenderloin w/ Sauteed Apples

Pork tenderloin with sauteed apples, golden mashed potatoes, and steamed broccoli.  The pork turned out a little tough, but everything had a great flavor.  I love the combination of sweet and savory.

Spinach, Caramelized, and Bacon Pizza

Spinach, caramelized onion, and bacon pizza and a garden salad.  I think this had too many onions for me to be crazy excited about it.  I didn’t make my own crust like the recipe called for.  I think it looked better than it tasted.

RECIPE:

Spinach, Caramelized Onion, and Bacon Pizza

Chipotle Pork Tacos

Chipotle pork tacos, three-bean vegetarian chili, and a garden salad.  The tacos had a really good flavor and were very quick and easy to throw together.  The chili was fantastic though.  Not only great for a vegetarian chili, but just as a chili.  If I had a rating system in place I would give this chili a top rating.  It’s not my favorite chili though.  My mom’s chili holds the crown for best chili.

Haluski and Czernina

Haluski, czernina (duck blood soup), a garden salad, and a paczki for dessert.  With it being Noodle Week and Fat Tuesday, this was the perfect dish.  It’s Polish and has noodles.  Continue reading “Haluski and Czernina”

Pork Tenderloin w/ Peppers

Pork tenderloin with red and yellow peppers, sauteed spinach with raisins and pine nuts, and a salad with goat cheese, pomegranate seeds, and walnuts.  This was quick and easy and would probably be just as good with chicken.
