Aloo Mattar (Potatoes and Peas) and Mushroom Cashew Curry

20214_02_05This is from a website visit frequently Manjula’s Kitchen. There are a ton of recipes here that are vegan, but we don’t really think about it while we are eating them. It’s just really good food. Ellie, and especially Chloe cobbled these up.

I usually double the ingredients for these recipes when I make them so we have plenty of leftovers. I also usually leave the green chiles out because Ellie is pretty sensitive to the mild heat they bring. My favorite out of these two was the mushroom cashew curry. It’s so good it was addicting. And so good that Chloe devoured three bowls of it.

2013_09_29aI’ve really been enjoying cooking the recipes from Manjula’s Kitchen. After buying a lot of the spices, it seems I always have ingredients on hand to make one of these recipes. They are all vegetarian recipes with just a few ingredients so prep goes pretty quick. After making a few of these, I think I finally got the hang of it.

I always make two dishes and double the recipes of each. That way there is plenty of leftovers. My second dish this time was butter paneer masala, which I’ve made before.

Root Vegetable Latkes w/ Beet Puree

2013_02_11This is a nice variation on potato pancakes with a combination of sweet potatoes, potatoes, and parsnips. The beet puree has a bit of apple in it making it a little sweet. We really liked the combined flavor of the potato cakes, beet puree, and the dill on top. I served these with roasted asparagus and a salad.

Ellie gobbled up the asparagus and the beets, but not the potatoes. She’s strange like that. This was a very satisfying filling meal. This will definitely be made again.
