Corn Pancakes w/ Smoked Salmon and Lemon-Chive Cream

I love pancakes, and I love corn bread. Blend those two together and slap on some smoked salmon with lemon-chive sour cream and that’s exactly what this was.

I wasn’t exactly sure what to expect, but I was pleasantly surprised. The lemon-chive sour cream was awesome on the pancakes. I would definitely make double the sour cream next time. I don’t like dry pancakes.

The pancakes were a little more effort that regular pancakes because you had to puree the corn mixture first, but that was about it.  All together we really liked his one.

Shrimp Florentine Pasta

Garlic, lemon, and butter. It doesn’t get much simpler than that. I eased up on the crushed red pepper for Ellie. I love these simple pasta dishes. Nice and light for summer too.

Shrimp Tacos

My friend has been posting a lot of recipes from the Pioneer Woman and they looked too good. So I’ve decided to step out of my Cooking Light comfort zone and give one a try. I found this to be a lot of chopping, but really good! The shrimp part was super easy.

Sake Salmon

Salmon, roasted broccoli, rice, and seaweed salad. I was asking a friend about salmon recipes and she suggested I try this one. Good suggestion. I loved this! Aya and Ellie liked it too. This was exactly what I was expecting.

RECIPES:

Sake Salmon

3/4 cup sake (or Japanese cooking wine)
2 Tbsp sugar
1/4 cup soy sauce
1 tsp vegetable oil
lemon zest from lemon rind
salmon (4 filets)
2 tsp sesame seeds

Combine sake through oil and marinade with fish for 30 min. After 30 min, pour marinade in small sauce pan and bring to a boil. Boil for a few minutes until sauce starts to thicken. Pour half of the marinade on fish and bake at 350 degrees for 10 minutes. Pour on remaining marinade and bake for another 10 minutes or until fish is done. Garnish with sesame seeds.

Cumin-Spiced Fish Tacos w/ Avocado-Mango Salsa

Wow, these tasted awesome! The cumin on the fish with the fruit in the salsa worked really well together. I served it with a cilantro lime rice as a side. This would make a good summertime porch sittin’ dinner too.
