Shrimp w/ Celery and Spicy Mayo

I got another break from cooking today.  Aya made one of her regulars today.  Shrimp and celery with spicy mayo, seaweed salad, rice, and miso soup.  This has been in her regular rotation for sometime now and she doesn’t remember where she got the recipe so she does it all from memory.  It’s simple and familiar, and always hits the spot.

RECIPE:

1lb frozen precooked shrimp
1 celery stalk sliced
sliced carrots
sliced asparagus
two spoonfuls of miracle whip
Toban Jan (Chinese red chili miso – found at Asian grocery store)

Sautee garlic with toban jan, add vegetables and cook for a few minutes. Add shrimp until thoroughly heated. Add two spoonfuls of miracle whip and mix. Serve with rice.

Creamy Linguine w/ Shrimp and Vegetables

Creamy linguine with shrimp and vegetables, and a garden salad.  You got the creamy from cream cheese on this one.  I was expecting an overwhelming cream cheese taste, but to my surprise, it didn’t have one.  This was an awesome.

Broiled Tilapia w/ Veracruz Sauce

Broiled tilapia with a veracruz sauce, steamed green beans, and homemade mashed potatoes.  This is one of my favorites!  This veracruz sauce comes from Dinah Shore’s Cookbook.  My neighbor gave this book to me as a Christmas gift last year.  It’s out of print now, so he got me a used edition.  Once he found out it was actually signed by Dinah Shore herself, he took it back and gave me a different copy.  Considering Dinah is one of his top three favorite singers of all time, I didn’t mind.  It’s a great book with great recipes.  If you see a random copy anywhere, I suggest you pick one up, and check if it’s autographed.

RECIPES:

Tilapia with Veracruz Sauce

Salt and pepper tilapia, squirt with lemon juice, broil on top rack for two minutes on each side or until done.

Veracruz sauce: (I always double everything)

1 tsp olive oil
1 tsp chopped scallions
1 large shallot finely chopped
1 Tbp finely chopped celery
1 Tbp green pepper finely chopped
1 tomato finely chopped
1 tsp salsa
3 mushrooms finely chopped
1/2 tsp salt

Combine ingredients in medium sauce pan and cook for about 15 minutes.  Let simmer until it turns a little saucy.  Mix cooked fish dripping with sauce and then serve on top of fish.

Sauteed Shrimp w/ Sherry & Chilis

Sauteed shrimp with sherry and chilis over brown rice, a side of roasted broccoli, and a garden salad.  I messed up a few steps in the cooking process, but this was a great dish.  It seems there is a poblano pepper shortage right now too, so I used just a green pepper instead.  I’d like to try this again with the poblano pepper.

Tilapia w/ Citrus Vinaigrette

Tilapia with citrus vinaigrette, green beans with bacon, and couscous.  The green beans were pretty straight forward and quite delicious.  A nice change from the regular boring steamed green beans.  I wasn’t a big fan of the citrus vinaigrette on the fish though.  Which could be my fault.  I cooked the fish in the same pan as the bacon without washing it first.  It was turkey bacon and there wasn’t much drippings left in the pan after it cooked.  I thought it’d be okay.  Maybe not.  Also, it called for sherry vinegar, which I didn’t have and have never used, so I used red wine vinegar instead.  Maybe that’s enough to mess it up, maybe not?  Either way, I thought it was just okay.  Actually, a little less than okay.
