Sauteed Sole w/ Browned Butter & Capers

Sauteed sole with browned butter and capers, mashed sweet potatoes, and roasted broccoli.  Can’t go wrong with anything on this list.  This browned butter sauce could be good on any white fish.  And the roasted broccoli, fantastic!  Alton Brown knows what he’s doing.

Salmon Sandwiches w/ Quinoa Salad

Salmon sandwiches, quinoa with dried cherries, and pistachios, and a garden salad.  This quinoa salad was fantastic.  Nice texture and flavors. I wasn’t a big fan of quinoa before, but I’m liking it more and more.  I didn’t have dried cherries or pistachios, so I used dried cranberries instead.  The salmon sandwiches were good.  The red pepper in the sauce added a nice subtle kick, too.

Quinoa with Dried Cherries and Pistachios

Shrimp Arrabbiata

Shrimp arrabbiata and a garden salad.  This recipe said it was super fast pasta.  It was exactly that.  I used cooked frozen shrimp instead of fresh.  The longest part was pulling the tails off.  And instead of linguine, I used whole wheat spaghetti noodles.  This was a nice quick dish with the red pepper adding a small kick.

Soba Noodle Salad w/ Citrus Vinaigrette

Soba noodle salad with citrus vinaigrette, seaweed salad, and green tea.  It seemed more like a pasta dish and less like a salad.  You could easily serve this warm or cold.  By the time we ate, it was inbetween.  I really liked this one.  It said you could use whole wheat pasta as a substitute for soba noodles.
