Maple Sage Pork, Stuffed Apples, Creamed Spinach, and Sweet Potato Carrot Soup

This was my mom’s birthday dinner. And before you think, “Oh, that’s so nice you cooked for you mom,” I should tell you her birthday was three months ago in August. But we still tried to make it special. Everything I made was from Cooking Light and all very good, except the spinach was a little lame in my opinion. It was good, but not great. This is probably my favorite pork tenderloin recipe I’ve tried so far too. So good, and soooo easy.

Pan-Grilled Ginger-Honey Pork Tenderloin

Pan grilled ginger honey pork tenderloin, sauteed spinach, and quinoa with dried apricots and cinnamon. I realized the few reviews this recipe had weren’t all that great after I started cooking. I don’t see why they gave it bad reviews though. It took longer than 15 minutes to cook like the recipe said, but it was tender and the ginger honey glaze was great. I let it marinate for a few hours too and I doubled the sauce. I don’t have a grill pan so I just used a regular pan. This was easy and tasted great. Aya loved it too.

Quinoa with Dried Apricots

Meatloaf and Quinoa Stuffed Squash

Meatloaf, quinoa stuffed squash, and green beans. The stuffed squash is a recipe, but I threw the meatloaf together to use up some ingredients. And for throwing it together, it turned out really moist and flavorful. I threw in a cube of pureed spinach and a 1/2 cup of very finely chopped carrots. I think that did it. The stuffed squashed was great

RECIPES:

Quinoa Stuffed Squash

Meatloaf

1.25 lbs ground beef
1 small onion chopped
1 egg
1/3 cup bread crumbs
1/2 cup finely chopped carrots
1 oz pureed spinach
salt and pepper
2 squirts ketch-up

Sauce: ketch-up and Worcester sauce

Mix all together, put in loaf pan, put sauce on top, and bake at 375 degrees for 30 to 45 minutes.

Asian-Style Meatloaf

Asian-style meatloaf, stir-fried broccoli, and white rice.  This was a really cool take on meatloaf.  Maybe a hint on the salty side, but really good flavor!

Chicken and Peach Quesadillas

Chicken and peach quesadillas with honey lime sour cream, corn saute, re-fried beans, and a garden salad with avocado.  It’s amazing how a little honey and lime in sour cream makes it seem so fancy.  It’s subtle, but definitely a nice touch.  I like the mix of fruit in things, especially in the summer.
