Eggplant Parmesan over Zucchini Noodles

We have an over abundance of garden produce right now. Green peppers, tomatoes, green beans, zucchinis, and tons of eggplant. I’ve made eggplant lasagnas in the past, but never tried eggplant Parmesan. Aya decided to give this one a whirl. We got this new contraption that whirls, twirls, and slices vegetables into awesome things. So instead of serving it over pasta, she served it over zucchini noodles.

Wow! I was worried that I wouldn’t like that much eggplant all at once. But between the fresh garden tomatoes, the crunch of the bread crumbs, and the tomato sauce, this was definitely a delicious meal.

Aya used fresh basil instead of dried, and used Japanese panko bread crumbs instead of the regular kind.

Summer Grilled Vegetable Pizza

This was very simple! I didn’t really grill the vegetables though, I put them under the broiler instead. We don’t have a grill. Can you believe it? Anyway, I will definitely make this of something like this again once the veggies from my garden are ready to pick.

I didn’t eat this, but considering there was no leftovers when I got home, I’m assuming Ellie and Aya tore it up.

Savory Orange Roasted Tofu and Asparagus

Orange roasted tofu and asparagus, miso soup, and a seaweed salad. If you make this dish, definitely use fresh basil instead of dried. I think it will make a huge difference in flavor. Other than that minor error, this was a pretty solid recipe. It had a very unique flavorful and was a great way to use up some tofu I had kickin’ around.

Black-Eyed Pea Cakes w/ Beer Braised Turnip Greens

I wasn’t sure what to expect when I first picked this, but Aya likes greens so I thought I’d give it a go. The cakes turned out great. They had a really good flavor and texture (for a meatless patty). They were a little on the dry side, but I could see this being a good patty for a veggie burger with a honey mustard sauce. However, the turnip greens were so awful we didn’t eat them. This was the first thing I’ve cooked that I found to be completely inedible. I know, I know, “turnip greens” should have been my first clue. I’ve had beet greens, collard greens, and mustard greens before and didn’t mind them so I figured turnip greens couldn’t be much different. Maybe it was the way they were cooked with the beer, but ugh, so nasty.

Tomato Apple Soup

Tomato apple soup and turkey sandwiches. This was inspired by watching Ellie “cook” in her play kitchen. She takes the apple and puts it in a pot, and then she pours in a can of tomato soup and stirs it up. At first it seemed gross, but then I figured it was probably a real thing. So I Googled it and sure enough, there were tons of recipes. I’m not big on tomato soup, but this was awesome! The apple added just a hint of sweetness to take an edge off the tomato-ness I usually don’t care for. This would be great with grilled cheese and I will make this again for sure.
