Spinach Pie

Spinach pie with goat cheese and pine nuts, coucous with artichokes, feta, and tomatoes, and garden salad.  I like spinach.  Actually, I love spinach.  It’s in my top three.  So I thought this was awesome.

Japanese Tofu Patties

Tofu patties, with sauteed spinach in ponzu sauce, gyoza, miso soup, rice, and seaweed salad.  The tofu patties I made with a mix Aya’s mom sends from Japan.  I should have used a non-stick pan though.  They are usually nice and round with a slightly golden exterior.  The gyoza are frozen from a bag.  So I don’t have any recipes for this one.

Garbanzo Beans & Greens

Garbanzo beans and greens, with a garden salad, and a cup of chicken artichoke soup from one of our local restaurants. I’ve only recently started eating kale, and at first, I wasn’t a huge fan. But the more things I’ve tried it in, the more I seem to like it. So it’s a good vegetable, it’s just not in my top three.

Green Curry w/ Bok Choy

Green curry with bok choy, brown rice, egg drop soup, and a small garden salad.  The green curry was a little more limey than I expected but I still liked it.  It wasn’t too spicey either, so if you like things with heat, you could probably kick it up a notch.  I didn’t have the Kaffir lime leaves it called for, but I don’t think it made that much of a difference.  You could also easily swap the tofu for chicken.
